Ingredients
Scale
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 4 cups chicken broth
- 1 cup cooked chicken (shredded or diced)
- 1/2 cup uncooked white rice (or brown rice for a healthier option)
- 1 medium carrot, peeled and diced
- 1/2 teaspoon ground turmeric (optional for color)
- 2 tablespoons fresh lime juice (plus extra for garnish)
- Zest of 1 lime
- Salt and pepper, to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for 5-7 minutes, until softened and translucent. Add the garlic and ginger, cooking for another 1-2 minutes, until fragrant.
- Add the Broth and Rice: Pour in the chicken broth, followed by the rice, diced carrot, and turmeric (if using). Bring the soup to a boil. Reduce the heat to low and cover the pot. Simmer for 15-20 minutes, or until the rice is cooked and the carrots are tender.
- Add Chicken and Lime: Stir in the cooked chicken, lime juice, and lime zest. Continue to cook for another 5-10 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
- Serve: Ladle the soup into bowls and garnish with fresh cilantro and a squeeze of lime juice. Serve hot.
Notes
- For extra flavor, you can add a tablespoon of fish sauce or soy sauce for a touch of umami.
- If you like the soup spicier, add a sliced chili pepper or a dash of red pepper flakes.
- For a richer soup, you can add a splash of coconut milk or cream towards the end of cooking.
- If you don’t have cooked chicken on hand, you can cook boneless, skinless chicken breasts in the broth until done, then shred them into the soup.
- This soup can be made ahead of time and stored in the fridge for 3-4 days. The flavors will improve as it sits.
