Description

This Gingerbread Cake with Cinnamon Molasses Frosting is the perfect blend of warm, comforting spices with a sweet and tangy twist. Moist, flavorful, and topped with a rich cinnamon molasses frosting, it’s an ideal dessert for the holidays or any cozy occasion.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup packed brown sugar
  • 2 large eggs
  • 1 cup unsulfured molasses
  • 1 tsp vanilla extract
  • 1 cup hot water

For the Cinnamon Molasses Frosting:

  • 4 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 ½ cups powdered sugar
  • 2 tbsp molasses
  • 1 tsp ground cinnamon
  • Pinch of salt

Instructions

  • Preheat the Oven: Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  • Dry Ingredients: In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
  • Wet Ingredients: In a large mixing bowl, beat the softened butter and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in molasses and vanilla extract.
  • Combine: Gradually add the dry ingredients to the wet ingredients, mixing until combined. Slowly pour in hot water, and stir until smooth.
  • Bake: Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
  • Make the Frosting: In a medium bowl, beat together the softened cream cheese and butter until smooth. Add powdered sugar, molasses, cinnamon, and a pinch of salt. Beat until fluffy.
  • Frost the Cake: Once the cake is cool, spread the frosting evenly over the top. Serve and enjoy!

Notes

  • Make sure the cake is completely cooled before frosting to avoid the frosting melting.
  • You can substitute the molasses with honey or maple syrup for a different flavor profile.
  • If you prefer a thicker frosting, add more powdered sugar as needed.
