Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix the Dry Ingredients:
    In a medium bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt. Set aside.
  3. Cream the Butter and Sugar:
    In a large bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 2 minutes.
  4. Add the Wet Ingredients:
    Beat in the egg and vanilla extract, mixing until fully incorporated. Add the milk and continue mixing.
  5. Combine the Dry and Wet Ingredients:
    Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together and is smooth. The dough should be soft but not too sticky. If it’s too sticky, add a little more gluten-free flour, a tablespoon at a time.
  6. Roll the Cookies:
    Roll the dough into small balls, about 1 tablespoon in size. Then roll each dough ball in the ¼ cup of granulated sugar to coat it evenly.
  7. Flatten the Cookies:
    Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the bottom of a glass or your fingers.
  8. Bake the Cookies:
    Bake for 8-10 minutes, or until the edges are set and the cookies are slightly puffed. They will firm up as they cool.
  9. Cool and Serve:
