Instructions

  1. Preheat the Oven:
    Preheat your oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix the Dry Ingredients:
    In a medium bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt. Set aside.

    In a large bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 2 minutes.

  6. Roll the Cookies:
    Roll the dough into small balls, about 1 tablespoon in size. Then roll each dough ball in the ยผ cup of granulated sugar to coat it evenly.
  7. Flatten the Cookies:
    Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the bottom of a glass or your fingers.
  8. Bake the Cookies:
    Bake for 8-10 minutes, or until the edges are set and the cookies are slightly puffed. They will firm up as they cool.
