Description

A delicious tart bursting with Mediterranean flavors, perfect for brunch, lunch, or a light dinner. Serve it warm or cold!


Ingredients

Scale
  • 250g all-purpose flour
  • 125g butter, cubed
  • 80ml (8cl) water
  • 1 teaspoon salt
  • 1 log of goat cheese
  • Cherry tomatoes (about a handful)
  • 100ml (10cl) heavy cream
  • 1 egg
  • 1 tablespoon whole-grain mustard
  • Salt and pepper, to taste
  • Herbes de Provence, to taste

Instructions

  • Prepare the Pastry: In a mixing bowl, combine the flour and cubed butter. Rub the butter into the flour until it resembles coarse sand. Create a well, gradually add water, and mix until the dough forms. Wrap in plastic and refrigerate for 30 minutes.
  • Preheat the Oven: Preheat your oven to 180°C (350°F).
  • Roll Out the Dough: Roll out the chilled dough on a floured surface and transfer it to a greased tart pan.
  • Prepare the Filling: In a bowl, whisk together the heavy cream, egg, and mustard. Season with salt and pepper, then pour the mixture over the tart base.
  • Assemble the Tart: Slice the goat cheese log into rounds and halve the cherry tomatoes. Arrange on top of the tart and sprinkle with Herbes de Provence.
  • Bake: Bake for about 30 minutes, or until the tart is golden and set.
  • Serve: Enjoy warm or cold as a light meal or appetizer.

Notes

For a gluten-free version, substitute with a gluten-free flour blend.
