Description

These whimsical Golden Snitch Rolls are as magical as they sound! Soft, sweet rolls filled with a hint of cinnamon and topped with a luscious butterscotch cream cheese frosting. Perfect for any Harry Potter fan, these rolls are a sweet treat to enchant your taste buds.

Ingredients

Scale

For the rolls:

  • 1 cup warm milk (110°F)
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar (for filling)

For the butterscotch cream cheese frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1/4 cup butterscotch sauce (store-bought or homemade)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Make the dough: In a small bowl, combine the warm milk, sugar, and yeast. Stir and let sit for 5-10 minutes, or until the mixture becomes frothy.
  2. In a large bowl, combine the flour, salt, and cinnamon. Add the yeast mixture, melted butter, eggs, and vanilla extract, mixing until the dough comes together.
  3. Knead the dough on a lightly floured surface for about 5-7 minutes, or until it is smooth and elastic. Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm place for about 1 hour, or until doubled in size.
  4. Prepare the rolls: Punch down the dough and roll it out on a floured surface into a rectangle (about 12×18 inches).
  5. Brush the dough with a little melted butter, then sprinkle with brown sugar and cinnamon. Roll the dough tightly into a log, starting from the long edge. Slice into 12 even pieces.
  6. Place the rolls in a greased 9×13-inch baking dish, cover with a towel, and let rise for another 30 minutes.
  7. Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes, or until they are golden brown.
  8. While the rolls are baking, prepare the frosting. In a medium bowl, beat together the softened cream cheese and butter until smooth. Add the butterscotch sauce, powdered sugar, vanilla extract, and a pinch of salt. Beat until light and fluffy.
  9. Frost the rolls: Once the rolls are done baking, allow them to cool slightly before spreading the butterscotch cream cheese frosting over the top. Serve warm.

Notes

  • These rolls can be made ahead of time. After baking, allow them to cool, then cover and refrigerate. Reheat before serving and frosting.
  • For an extra touch, drizzle more butterscotch sauce over the frosting for an added layer of sweetness.
  • The frosting can be stored in the fridge for up to 3 days. Just bring it to room temperature before spreading on the rolls.
