Indulge in this delightful Gooey Marshmallow Caramel Popcorn! Perfect for movie nights or as a sweet treat at gatherings, this easy recipe combines the irresistible flavors of buttery caramel, marshmallows, and a hint of salt, with the option to add colorful M&M’s for a fun twist.


Ingredients

  • 13 to 16 cups popcorn, lightly salted (Skinny Pop recommended for convenience)
  • 1 cup butter
  • 16 ounces mini marshmallows
  • ¾ cup light brown sugar, packed
  • Optional: ½ teaspoon vanilla extract
  • Optional: Flake sea salt, for sprinkling
  • Optional: ½ cup mini M&M’s

Instructions

  • Add Popcorn to Bowl: Pour 13-16 cups popped popcorn into a large bowl.
  • Melt Butter and Marshmallows: In a large pan over medium-low heat, melt 1 cup of butter and 16 ounces of mini marshmallows.
  • Add Brown Sugar and Coat Popcorn: Once the butter is melted, stir in ¾ cup brown sugar until it is dissolved (about 1 minute). Remove from heat and add ½ teaspoon vanilla extract if desired. Let sit for a minute, then pour the mixture over the bowl of popcorn. Stir until the popcorn is completely coated. Add more popcorn to achieve your desired texture.
  • Spread on Wax Paper: Spread the coated popcorn onto wax paper and sprinkle with flake sea salt or M&M’s if desired.
