  • For the Chocolate Filling:
    • 1 1/4 cups granulated sugar
    • 1/4 cup unsweetened cocoa powder
    • 1/4 cup cornstarch
    • 1/4 tsp salt
    • 3 cups whole milk
    • 4 large egg yolks
    • 2 tbsp unsalted butter
    • 1 1/2 tsp vanilla extract
  • For the Whipped Topping (Optional):
    • 1 cup heavy whipping cream
    • 2 tbsp powdered sugar
    • 1/2 tsp vanilla extract

Instructions

  • Pre-bake the Pie Crust: If using a homemade crust, pre-bake according to your recipe’s instructions. For a store-bought crust, follow package directions. Set aside to cool.
  • Prepare the Chocolate Filling: In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. Gradually whisk in milk until fully dissolved. Cook over medium heat, whisking constantly until the mixture thickens and bubbles. Reduce heat to low.
  • Temper the Egg Yolks: In a separate bowl, lightly beat egg yolks. Slowly whisk about 1/2 cup of the hot chocolate mixture into the egg yolks, then pour the egg yolk mixture back into the saucepan. Continue cooking for 2-3 more minutes until thickened to a pudding-like consistency.
  • Finish the Filling: Remove from heat and stir in butter and vanilla extract.
  • Pour and Chill: Pour the filling into the pre-baked pie crust and smooth the top. Allow to cool to room temperature, then refrigerate for at least 3-4 hours until fully set.
  • Prepare the Whipped Topping (Optional): In a medium bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Spread or pipe over the chilled chocolate pie.
  • Serve: Slice and enjoy!
