For the Filling:
- 4 cups water
- 4 cups raisins
- 1 cup light brown sugar
- 5 tablespoons cornstarch
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 teaspoons lemon juice
- 3 tablespoons butter (not margarine)
- 1 teaspoon vanilla extract
For the Pie Crust:
- 2, 9-inch deep dish pie shells
Instructions
- Prepare the Raisins:
- Combine raisins and water in a medium pot. Bring to a boil and cook for 5 minutes.
- Make the Filling:
- Blend brown sugar, cornstarch, cinnamon, and salt in a separate bowl. Gradually stir this mixture into the hot raisins.
- Cook and stir until the syrup thickens. Remove from heat and stir in lemon juice, butter, and vanilla extract. Allow the mixture to cool slightly.
- Assemble the Pie:
- Pour the raisin filling into one of the pie shells.
- Remove the crust from the second pie shell and place it on top of the filled pie. Seal the edges by pinching them together and cut a few slits in the top crust.
- Bake:
- Bake in a preheated 425°F (220°C) oven for 30-35 minutes until the crust is golden brown and the filling is bubbly.
Notes
If the filling is too runny, mix an additional tablespoon of flour with a bit of milk to create a thickening slurry, then stir into the filling and cook for another minute.
