Description

A nostalgic dessert with a rich, gooey raisin filling encased in a flaky pie crust. This classic pie brings a touch of old-fashioned sweetness to any occasion.

Ingredients

Scale

For the Filling:

  • 4 cups water
  • 4 cups raisins
  • 1 cup light brown sugar
  • 5 tablespoons cornstarch
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons lemon juice
  • 3 tablespoons butter (not margarine)
  • 1 teaspoon vanilla extract

For the Pie Crust:

  • 2, 9-inch deep dish pie shells

Instructions

  • Prepare the Raisins:
    • Combine raisins and water in a medium pot. Bring to a boil and cook for 5 minutes.
  • Make the Filling:
    • Blend brown sugar, cornstarch, cinnamon, and salt in a separate bowl. Gradually stir this mixture into the hot raisins.
    • Cook and stir until the syrup thickens. Remove from heat and stir in lemon juice, butter, and vanilla extract. Allow the mixture to cool slightly.
  • Assemble the Pie:
    • Pour the raisin filling into one of the pie shells.
    • Remove the crust from the second pie shell and place it on top of the filled pie. Seal the edges by pinching them together and cut a few slits in the top crust.
  • Bake:
    • Bake in a preheated 425°F (220°C) oven for 30-35 minutes until the crust is golden brown and the filling is bubbly.

Notes

If the filling is too runny, mix an additional tablespoon of flour with a bit of milk to create a thickening slurry, then stir into the filling and cook for another minute.
