Description

Succulent and flavorful, these Greek Chicken Gyros are marinated in a perfect blend of savory, tangy, and herbaceous ingredients, then slow-roasted to caramelized perfection. Whether served with pita, tzatziki, or salad, this dish is sure to impress! Perfect for a Mediterranean feast.

Ingredients

Scale
  • 12 boneless, skinless chicken thighs (~1.3 kg total)
  • ⅛ cup olive oil
  • 2 tbsp honey Dijon mustard
  • 6 cloves garlic, minced (or 3 large cloves)
  • Zest of 2 lemons
  • ½ tbsp salt (adjust if using table salt)
  • Dry oregano, to taste
  • 1 cup water or stock (for the bottom of the pan)

Instructions

    1. Preheat the Oven: Preheat your oven to 425°F (220°C).
    2. Prepare the Marinade: In a large bowl, combine the chicken thighs with olive oil, honey Dijon mustard, garlic, lemon zest, salt, and oregano. Mix well to coat the chicken thoroughly. For best results, marinate for at least 1 hour or overnight in the refrigerator.
    3. Assemble the Spit:
      • Vertical Gyro Spit Method: Thread the chicken thighs onto the spit, alternating the direction of each piece for even cooking.
      • DIY Method: Cut an onion in half, place it cut-side down on a parchment-lined baking sheet, and insert two wooden skewers vertically into the onion. Thread the chicken thighs onto the skewers.
    4. Bake the Gyros: Place the assembled gyro in the oven. Add 1 cup of water or stock to the base of the baking sheet to create a flavorful sauce.
Tip: Cover the top chicken thigh with pierced foil to prevent burning. Bake for 75-90 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
    5. Rest and Slice: Remove the gyro from the oven and let it rest for a few minutes. Slice the chicken thinly and serve as desired.

Serving Suggestions:

    • Pita Wraps: Stuff into warm pita bread with tzatziki, fresh veggies, and feta cheese.
    • Loaded Greek Fries: Top crispy fries with sliced gyro chicken, tzatziki, and diced tomatoes.
    • Greek Salad: Add sliced chicken to a classic Greek salad for a hearty meal.

Notes

  • For a more intense flavor, marinate the chicken overnight.
  • If you don’t have a gyro spit, the DIY method with skewers and an onion works just as well for cooking the chicken evenly.
  • Make sure to rest the chicken for a few minutes after baking to retain the juices.
