Ingredients
For the Greek Chicken Skewers:

2 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)

4 large russet potatoes (peeled and cut into fries)

Instructions

Marinate the chicken:

In a bowl, combine the olive oil, lemon juice, dried oregano, minced garlic, cumin, paprika, salt, and pepper.

Add the chicken cubes to the marinade, mix well, and cover. Let it marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.

Preheat the oven to 400°F (200°C).

Toss the cut fries with olive oil, oregano, salt, and pepper, then spread them evenly on a baking sheet.
