For the Greek Chicken Skewers:

  • 2 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)

  • 3 tbsp olive oil

  • 2 tbsp lemon juice

  • 2 tsp dried oregano

  • 2 garlic cloves, minced

  • 1 tsp ground cumin

  • 1/2 tsp paprika

  • Salt and pepper to taste

  • Skewers (wooden or metal)

For the Feta Fries:

  • 4 large russet potatoes (peeled and cut into fries)

  • 2 tbsp olive oil

  • 1/2 tsp dried oregano

  • Salt and pepper to taste

  • 1/4 cup crumbled feta cheese

  • 1 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Marinate the chicken:

    • In a bowl, combine the olive oil, lemon juice, dried oregano, minced garlic, cumin, paprika, salt, and pepper.

    • Add the chicken cubes to the marinade, mix well, and cover. Let it marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.

  2. Prepare the fries:

    • Preheat the oven to 400°F (200°C).

    • Toss the cut fries with olive oil, oregano, salt, and pepper, then spread them evenly on a baking sheet.

    • Bake for 25-30 minutes or until crispy and golden brown, flipping halfway through.

  3. Prepare the chicken skewers:

    • Thread the marinated chicken cubes onto the skewers.

    • Preheat a grill or grill pan to medium-high heat.

    • Grill the skewers for 5-7 minutes on each side, or until the chicken is fully cooked (internal temperature should reach 165°F/74°C).

  4. Assemble and serve:

    • Once the fries are done, remove them from the oven and sprinkle with crumbled feta cheese and fresh parsley.

    • Serve the Greek chicken skewers alongside the feta fries, and enjoy!

Notes

  • You can serve this with a side of tzatziki sauce for dipping.

  • If you prefer, you can also use sweet potatoes instead of russet potatoes for a twist.
