- Salt and pepper, to taste
- Wooden skewers (soaked in water for 30 minutes, if using)
- For the Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and excess water squeezed out
- 1 tablespoon olive oil
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Fresh parsley (for garnish)
Instructions
- For the Chicken Souvlaki: In a large bowl, combine olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add the chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours, to marinate.
- Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers.
- Grill the chicken for 4-5 minutes per side, or until fully cooked and golden brown on the outside. Remove from skewers and set aside.
- For the Tzatziki Sauce: In a medium bowl, mix together Greek yogurt, grated cucumber, olive oil, dill, lemon juice, garlic, salt, and pepper. Stir until smooth and well combined. Adjust seasoning to taste.
- Serve the chicken souvlaki with tzatziki sauce on the side, and garnish with fresh parsley.
Notes
- For a low-carb meal, serve the souvlaki with a salad or over cauliflower rice.
- If you prefer, you can also cook the chicken in a skillet over medium-high heat if you don’t have access to a grill.
- For added flavor, you can add sliced red onions and tomatoes to the serving plate or in pita bread for a more traditional souvlaki wrap.
