- Juice of 1 lemon

Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the Potatoes: Wash and dry the potatoes. Cut them in halves or quarters depending on their size to ensure they cook evenly.
- Season the Potatoes: In a large mixing bowl, toss the potato pieces with olive oil, minced garlic, dried oregano, dried thyme, salt, black pepper, and lemon juice. Make sure the potatoes are well coated in the seasonings.
