  • 1 ½ lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/3 cup olive oil
  • 1 lemon, juiced and zested
  • 1 tbsp red wine vinegar
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. In a bowl, whisk together olive oil, lemon juice and zest, red wine vinegar, garlic, oregano, thyme, salt, and pepper.
  3. Place chicken thighs and potatoes in a large bowl or zip-top bag. Pour marinade over them, toss to coat evenly, and marinate for at least 30 minutes (up to overnight for deeper flavor).
  4. Arrange chicken and potatoes in a single layer in the baking dish. Pour any remaining marinade over the top.
  5. Roast in the oven for 40–45 minutes, or until chicken is fully cooked (internal temp 165°F) and potatoes are golden and tender.
  6. Optional: Broil for 2–3 minutes at the end for extra crispiness.
  7. Garnish with chopped parsley and serve warm with lemon wedges if desired.

  • Can substitute chicken thighs with drumsticks or breasts, but adjust cooking time accordingly.
