Greek Lemon Potatoes are a flavorful, crispy dish with tender potatoes roasted in a tangy lemon, garlic, and olive oil dressing. These potatoes are the perfect side dish, full of bright citrus and Mediterranean flavors.

- 2 lbs baby potatoes (or Yukon Gold, cut into wedges)
- 3 tbsp olive oil
- 1/4 cup fresh lemon juice
- 2 tbsp lemon zest
- 4 garlic cloves, minced
- 1 tbsp dried oregano
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/4 cup chicken broth (or vegetable broth for a vegetarian version)
- 1 tbsp fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and black pepper. Stir to combine.
- Add the potato wedges to the bowl and toss to coat them evenly with the lemon mixture.
- Transfer the coated potatoes to the prepared baking sheet, arranging them in a single layer.
- Pour the chicken or vegetable broth over the potatoes.
- Roast the potatoes in the preheated oven for 40–45 minutes, or until they are golden brown and crispy on the outside, and tender on the inside. Make sure to toss the potatoes halfway through the roasting time for even cooking.
- Once cooked, remove the potatoes from the oven and let them rest for a few minutes.
- Garnish with fresh parsley, if desired, and serve immediately.
Notes
- For extra crispy potatoes, you can broil them for 2-3 minutes at the end of roasting time.
- If you want to make these potatoes spicier, you can add a pinch of red pepper flakes to the seasoning mix.
- Leftover potatoes can be stored in the fridge for 2-3 days and reheated in the oven for best results.
