Ingredients
Scale
- 4 mini naan rounds (or 2 large cut into quarters)
- 1 cup hummus (plain or roasted garlic)
- 1/2 cup cherry tomatoes, quartered
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup Kalamata olives, chopped
- 1/4 cup crumbled feta cheese
- 1 tablespoon fresh parsley or dill, chopped
- 1 tablespoon extra virgin olive oil
- 1 teaspoon red wine vinegar
- Salt and black pepper, to taste
Instructions
- Lightly toast the naan rounds in a skillet or oven until warmed and slightly crisp. Set aside.
- In a bowl, combine tomatoes, cucumber, red onion, olives, olive oil, red wine vinegar, salt, and pepper. Toss to combine.
- Spread a generous layer of hummus over each naan round.
- Top each with a spoonful of the Greek salad mixture.
- Sprinkle with feta cheese and fresh herbs.
- Serve immediately as an appetizer or light lunch!
Notes
- You can use store-bought or homemade hummus—roasted red pepper hummus adds a flavorful twist.
- Make it vegan by omitting the feta or using plant-based cheese.
- To serve as a party platter, cut naan into smaller triangles and secure toppings with toothpicks.
