- 1 Tablespoon Fresh Dill, diced (for Tzatziki)
- 3 Garlic Cloves, finely diced (for Tzatziki)
- 1 cucumber, grated and squeezed to drain (for Tzatziki)
- 3 Tomatoes, diced (for Salad)
- 2 Cucumbers, peeled and diced (for Salad)
- 1/4 Red Onion, diced (for Salad)
- 2 Tablespoons Fresh Italian Parsley, diced (for Salad)
- 1 Tablespoon Extra Virgin Olive Oil (for Salad)
- Salt and Pepper to taste (for Salad)
- Feta Cheese, for topping
- 4-6 Greek Pita Breads, Naan, or Flatbread
Instructions
- Place chicken, yogurt, lemon juice, olive oil, vinegar, salt, pepper, and oregano in a bag. Let marinate at least 30 minutes, preferably 2-4 hours or ideally 24 hours.
- Prepare the tzatziki sauce by stirring together yogurt, olive oil, lemon juice, vinegar, salt, dill, and garlic. Add grated cucumber (squeezed to remove excess water) and mix well. Adjust seasonings to taste.
- Make the Greek salad by combining tomatoes, cucumbers, red onion, parsley, olive oil, salt, and pepper in a bowl. Toss to coat evenly and season to taste.
- Cook the chicken on a grill or skillet. For grilling, thread chicken onto kebobs and grill over medium heat for 5-7 minutes per side until fully cooked. For skillet cooking, heat oil over medium-high heat and cook chicken for 8-10 minutes until golden brown and cooked through.
- Warm pita bread to make it pliable. Assemble gyros by placing cooked chicken inside, topping with tzatziki sauce, Greek salad, and feta cheese if desired.
Notes
- Marinating overnight gives the chicken the best flavor and tenderness.
- Squeeze the cucumber well to avoid a watery tzatziki sauce.
- You can use store-bought flatbreads if Greek pita is unavailable.
- Add chili flakes for a spicy kick.
