Description

Ingredients

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup creamy peanut butter
  • 1/2 cup Greek yogurt
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, mix peanut butter, Greek yogurt, and brown sugar until smooth.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  5. Alternately add dry ingredients and milk to the wet mixture, beginning and ending with dry ingredients. Mix until just combined.
  6. Fold in chocolate chips.
  7. Divide batter evenly into muffin cups, filling about 3/4 full.
  8. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  9. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
