Description

  • 1/2 cup shredded Monterey Jack cheese
  • 1 (4 oz) can diced green chiles, drained
  • 1/2 cup chopped roasted green chiles (optional for extra heat)
  • 2 large eggs
  • 3/4 cup milk
  • 1/3 cup vegetable oil or melted butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and garlic powder.
  3. Stir in the shredded cheddar and Monterey Jack cheeses and both types of green chiles.
  4. In a separate bowl, whisk together the eggs, milk, and oil or melted butter until well combined.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely or serve warm.
