For the Green Goddess Dressing:

- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 tablespoon capers (optional)
- 1 small garlic clove

Instructions
- Make the Green Goddess Dressing:
- In a blender or food processor, combine the fresh basil, parsley, Greek yogurt, olive oil, lemon juice, apple cider vinegar, capers (if using), garlic, salt, and pepper.
- Blend until smooth and creamy. Adjust seasoning with more salt, pepper, or lemon juice as needed. Set aside.
- Prepare the taco filling:
- Heat a non-stick skillet over medium heat. Add the cooked black beans and corn, and sauté for 3-4 minutes, stirring occasionally, until warmed through. Season with a pinch of salt and pepper.
- Warm the tortillas in a dry skillet or microwave for a few seconds until soft and pliable.
- Assemble the tacos:
- Spread a spoonful of the Green Goddess dressing on the bottom of each tortilla.
