- 2 tbsp fresh lemon juice
- 1 tbsp olive oil (for dressing)
- 1 tsp Dijon mustard
- 1/2 tsp honey (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the grill to medium-high heat.
- Toss the asparagus with olive oil, salt, and pepper until well-coated.
- Place the asparagus on the grill and cook for 3-4 minutes per side, until tender and slightly charred.
- While the asparagus is grilling, prepare the dressing by whisking together the lemon juice, olive oil, Dijon mustard, honey (if using), salt, and pepper in a small bowl.
- Once the asparagus is grilled, remove it from the heat and let it cool slightly. Cut the asparagus into 2-inch pieces.
