- 2 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup cooked chicken, shredded (optional)
- 1/4 cup black beans, rinsed and drained
- 1/4 cup corn kernels (fresh or frozen)
- 2 tbsp salsa
- 1 tbsp butter
- 1/4 cup sour cream (optional)
Instructions
- Lay one tortilla flat and evenly spread shredded cheese over the entire surface.
- Add chicken, black beans, corn, and salsa over one half of the tortilla.
- Fold the tortilla over the fillings to make a half-moon shape, pressing gently.
- Heat a skillet over medium heat and melt butter.
- Place the filled tortilla in the skillet and cook until golden brown and cheese melts, about 3-4 minutes per side.
- Remove from skillet, cut in half, and serve with sour cream if desired.
Notes
- Use any cheese blend you like for different flavors.
- Make it vegetarian by omitting chicken.
- Add avocado slices or jalapeños for extra texture and spice.
