- 4 slices bread of choice
- 1 cup Gouda cheese, shredded
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the vegetables: On a baking sheet, toss the sliced mushrooms and onion with olive oil. Sprinkle with salt and pepper. Roast in the oven for about 20 minutes or until browned to your preference.
- Melt the butter: In a skillet over medium heat, melt 4 tablespoons of butter.
- Assemble the sandwiches: On one slice of bread, layer shredded Gouda, followed by roasted mushrooms and onions, and then another layer of Gouda. Top with a second slice of bread and press lightly.
