Description

This elevated grilled cheese brings together the earthy flavors of roasted mushrooms and sweet caramelized onions with the gooey richness of Gouda cheese, all sandwiched between perfectly golden, buttery bread. Perfect for a comforting meal or a cozy lunch!

  • 8 ounces mushrooms, sliced
  • 1 medium sweet onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 tablespoons butter
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 1 cup Gouda cheese, shredded

Instructions

  • Roast the Veggies:
    Preheat your oven to 400°F (200°C). On a baking sheet, toss the mushrooms and onions with olive oil, and season with salt and pepper. Roast for 20 minutes or until golden brown and caramelized.
  • Prepare the Sandwich:
    While the veggies are roasting, heat a skillet over medium heat and melt the butter. Layer shredded Gouda on one slice of bread, then add the roasted mushrooms and onions. Add another layer of Gouda and cap it with the second slice of bread. Gently press the sandwich together.
  • Grill the Sandwich:
    Briefly dip both sides of the sandwich in the melted butter. Grill for 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.
