  • 1 tbsp chopped fresh parsley (optional, for garnish)

For the Caesar Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 garlic clove, minced
  • 1/4 tsp anchovy paste (optional, but traditional)
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Grill the Chicken:
    Preheat your grill or grill pan to medium-high heat. Rub the chicken breasts with olive oil and season with salt and pepper. Grill the chicken for 6-7 minutes per side or until fully cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
  2. Prepare the Caesar Dressing:
    In a bowl, whisk together mayonnaise, grated Parmesan, Dijon mustard, lemon juice, Worcestershire sauce, garlic, and anchovy paste (if using). Slowly whisk in the olive oil until the dressing is smooth. Season with salt and pepper to taste.
  3. Assemble the Salad:
    In a large salad bowl, toss the chopped romaine lettuce with the Caesar dressing until evenly coated. Add the croutons and toss again.
  4. Add the Chicken and Serve:
