Description

    • 2 boneless, skinless chicken breasts
    • 1 tbsp olive oil

    • 4 cups mixed salad greens (spinach, arugula, or romaine)
    • 1 cup cherry tomatoes, halved
    • 1 avocado, sliced
    • 1/2 cup fresh mozzarella balls or cubed mozzarella
    • 2 tbsp fresh basil, chopped (for garnish)
  • For the Balsamic Glaze:
    • 1/2 cup balsamic vinegar
    • 1 tbsp honey
  • For the Dressing:
    • 1/4 cup olive oil
    • 1 tbsp balsamic vinegar
    • 1 tsp Dijon mustard
    • Salt and pepper, to taste

Instructions

  • Grill the Chicken:
    • Preheat your grill or grill pan to medium heat.
    • Rub the chicken breasts with olive oil, garlic powder, salt, and pepper.
    • Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).
    • Remove the chicken from the grill and let it rest for a few minutes before slicing.
  • Prepare the Balsamic Glaze:
    • In a small saucepan, combine the balsamic vinegar and honey.
    • Bring the mixture to a simmer over medium heat, stirring occasionally.
    • Reduce the heat and let the mixture thicken for about 5-7 minutes. Remove from heat and let it cool.
  • Assemble the Salad:
    • In a large salad bowl, arrange the mixed greens.
    • Add the halved cherry tomatoes, sliced avocado, and mozzarella balls or cubes.
    • Slice the grilled chicken breasts and place them on top of the salad.
  • Make the Dressing:
    • In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
  • Drizzle and Serve:
    • Drizzle the balsamic glaze over the chicken and salad.
    • Garnish with fresh basil and serve with the dressing on the side.
