- 1 tbsp honey
- For the Dressing:
- 1/4 cup olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Instructions
- Grill the Chicken:
- Preheat your grill or grill pan to medium heat.
- Rub the chicken breasts with olive oil, garlic powder, salt, and pepper.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F).
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
- Prepare the Balsamic Glaze:
- In a small saucepan, combine the balsamic vinegar and honey.
- Bring the mixture to a simmer over medium heat, stirring occasionally.
- Reduce the heat and let the mixture thicken for about 5-7 minutes. Remove from heat and let it cool.

- In a large salad bowl, arrange the mixed greens.
- Add the halved cherry tomatoes, sliced avocado, and mozzarella balls or cubes.
- Slice the grilled chicken breasts and place them on top of the salad.
- Make the Dressing:
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
- Drizzle and Serve:
- Drizzle the balsamic glaze over the chicken and salad.
- Garnish with fresh basil and serve with the dressing on the side.
