- 2.5 lbs chicken wings, separated into flats and drumettes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 1/4 cup chopped peperoncini (jarred)
- 2 tbsp peperoncini brine (from the jar)
- 1 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates.
- In a large bowl, toss the chicken wings with olive oil, salt, pepper, and smoked paprika until evenly coated.
- Grill the wings for 20–25 minutes, turning every 5 minutes, until golden brown and cooked through with crispy skin.
- While the wings are grilling, melt butter in a small saucepan over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
- Stir in chopped peperoncini and brine. Simmer for another minute and then remove from heat.
- Transfer grilled wings to a large bowl and pour the peperoncini garlic butter over them. Toss well to coat.
- Garnish with chopped parsley and serve hot.
Notes
- For extra heat, add red pepper flakes or swap in hot cherry peppers.
- Wings can also be baked at 425°F for 40–45 minutes if you don’t have a grill.
- Pair with ranch, blue cheese, or even tzatziki for dipping.
