Description

Grilled Garlic Herb Potatoes are crispy on the outside, tender on the inside, and full of flavor from garlic, fresh herbs, and a hint of olive oil. Perfect as a side dish for any summer BBQ or grilled meal.


Ingredients

  • 1 lb baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your grill to medium-high heat (about 400°F) and lightly oil the grill grates or use a grill pan.
  2. In a large mixing bowl, toss the halved or quartered potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper until well coated.
  3. Place the potatoes in a grill basket or directly on the grill. If using the grill basket, cover with a lid.
  4. Grill the potatoes for 20-25 minutes, turning occasionally, until the potatoes are golden brown and fork-tender. Be sure to check them every 5-7 minutes to avoid burning and to ensure they cook evenly.
  5. Once done, remove from the grill and garnish with freshly chopped parsley if desired. Serve hot.

Notes

  • For even more flavor, add a squeeze of fresh lemon juice or some grated Parmesan cheese over the potatoes just before serving.
  • If you prefer, you can parboil the potatoes for 5 minutes before grilling to reduce grilling time and ensure they cook evenly.
  • Feel free to adjust the herbs based on your preferences; dill or oregano also work great with potatoes.
