- 4 tbsp unsalted butter
- 1/2 cup heavy cream

For the Asparagus:
- 1 bunch asparagus, trimmed
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Prepare the Lamb Chops:
- In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
- Rub the mixture over the lamb chops and let them marinate for at least 30 minutes.
- Heat a grill or grill pan over medium-high heat.
- Grill the lamb chops for about 3-4 minutes on each side for medium-rare (adjust cooking time for preferred doneness).
- Remove from the grill and let the lamb chops rest while preparing the sides.
- Make the Red Wine Reduction:
- In a small saucepan over medium heat, combine red wine, beef broth, balsamic vinegar, and honey.
- Bring the mixture to a boil, then reduce the heat and let it simmer until reduced by half (about 10 minutes).
- Stir in the butter until the sauce is smooth and glossy. Season with salt and pepper to taste.
- Prepare the Mashed Potatoes:
- Boil the potatoes in salted water until tender, about 15 minutes. Drain well.
- Mash the potatoes with butter and heavy cream until smooth and creamy. Season with salt and pepper.
- Cook the Asparagus:
- Heat olive oil in a skillet over medium heat.
- Add the asparagus, season with salt and pepper, and cook for about 4-5 minutes, or until tender-crisp.
- Assemble and Serve:
- Plate the mashed potatoes, grilled lamb chops, and asparagus.
- Drizzle the red wine reduction over the lamb chops.
- Garnish with freshly chopped chives.
