For the Lamb Chops:

For the Red Wine Reduction:

  • 1 cup red wine
  • 1/2 cup beef broth
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 2 tbsp unsalted butter
  • Salt and pepper, to taste

For the Mashed Potatoes:

  • 2 lbs potatoes, peeled and chopped
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • Salt and pepper, to taste

For the Asparagus:

  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  • Prepare the Lamb Chops:
    • In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper.
    • Rub the mixture over the lamb chops and let them marinate for at least 30 minutes.
    • Heat a grill or grill pan over medium-high heat.
    • Grill the lamb chops for about 3-4 minutes on each side for medium-rare (adjust cooking time for preferred doneness).
    • Remove from the grill and let the lamb chops rest while preparing the sides.
  • Make the Red Wine Reduction:
    • In a small saucepan over medium heat, combine red wine, beef broth, balsamic vinegar, and honey.
    • Bring the mixture to a boil, then reduce the heat and let it simmer until reduced by half (about 10 minutes).
    • Stir in the butter until the sauce is smooth and glossy. Season with salt and pepper to taste.
  • Prepare the Mashed Potatoes:
    • Boil the potatoes in salted water until tender, about 15 minutes. Drain well.
    • Mash the potatoes with butter and heavy cream until smooth and creamy. Season with salt and pepper.
  • Cook the Asparagus:
    • Heat olive oil in a skillet over medium heat.
    • Add the asparagus, season with salt and pepper, and cook for about 4-5 minutes, or until tender-crisp.
  • Assemble and Serve:
    • Plate the mashed potatoes, grilled lamb chops, and asparagus.
    • Drizzle the red wine reduction over the lamb chops.
    • Garnish with freshly chopped chives.
