Instructions

  1. Grill the Sausages:
    Preheat the grill to medium-high heat. Grill the sausages for about 6-8 minutes on each side, or until they reach an internal temperature of 160°F (71°C) and are cooked through. Once done, remove from the grill and set aside to rest.
  2. Sauté the Peppers and Onions:
    While the sausages are grilling, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and peppers, cooking until softened and slightly caramelized, about 10-12 minutes, stirring occasionally.
  3. Add Garlic and Seasonings:
    Add the minced garlic to the skillet with the peppers and onions. Stir and cook for another 1-2 minutes, or until fragrant. Season with salt, pepper, and oregano (if using). For extra flavor, drizzle in a tablespoon of balsamic vinegar and stir to combine. Remove from heat once the peppers and onions are tender and caramelized.
  4. Toast the Rolls:
    While the peppers and onions are cooking, toast the sandwich rolls on the grill for 1-2 minutes until lightly crispy.
  5. Assemble the Sandwiches:
    Place a grilled sausage onto each toasted roll. Spoon a generous amount of the sautéed peppers and onions on top of each sausage.
  6. Serve:
