Ingredients
Scale
- 4 sausage links (Italian sausage, bratwurst, or your favorite variety)
- 4 sandwich rolls (hoagie rolls or crusty baguettes work best)
- 2 tablespoons olive oil
- 1 large onion (sliced)
- 2 bell peppers (sliced, any color)
- 2 cloves garlic (minced)
- Salt and pepper to taste
- 1 teaspoon dried oregano (optional)
- 1 tablespoon balsamic vinegar (optional, for a tangy kick)
- Fresh parsley or basil (chopped, for garnish)
- Mustard or your favorite condiments (optional)
Instructions
- Grill the Sausages:
Preheat the grill to medium-high heat. Grill the sausages for about 6-8 minutes on each side, or until they reach an internal temperature of 160°F (71°C) and are cooked through. Once done, remove from the grill and set aside to rest. - Sauté the Peppers and Onions:
While the sausages are grilling, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and peppers, cooking until softened and slightly caramelized, about 10-12 minutes, stirring occasionally. - Add Garlic and Seasonings:
Add the minced garlic to the skillet with the peppers and onions. Stir and cook for another 1-2 minutes, or until fragrant. Season with salt, pepper, and oregano (if using). For extra flavor, drizzle in a tablespoon of balsamic vinegar and stir to combine. Remove from heat once the peppers and onions are tender and caramelized. - Toast the Rolls:
While the peppers and onions are cooking, toast the sandwich rolls on the grill for 1-2 minutes until lightly crispy. - Assemble the Sandwiches:
Place a grilled sausage onto each toasted roll. Spoon a generous amount of the sautéed peppers and onions on top of each sausage. - Serve:
Garnish with fresh parsley or basil for color and freshness. If desired, add your favorite condiments like mustard or ketchup, and serve the sandwiches hot.
Notes
- You can substitute the sausages with chicken, turkey, or veggie sausages if preferred.
- For a different twist, you can add cheese, such as provolone or mozzarella, on top of the sausage before adding the peppers and onions, and melt it under the grill.
- If you don’t have a grill, you can cook the sausages in a skillet or on a stovetop grill pan.
