- 1 cup cooked grits, cooled
- 1/2 cup shredded sharp cheddar cheese
- 1/2 lb grilled shrimp, chopped
- 1/4 cup green onions, sliced
- 1 egg, beaten
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- 2 tbsp olive oil or vegetable oil for frying
- For Smoky Cream:
- 1/2 cup sour cream
- 1 tsp smoked paprika
- 1 tsp lemon juice
- Salt to taste
Instructions
- In a large bowl, combine cooled grits, cheddar cheese, chopped grilled shrimp, green onions, beaten egg, flour, salt, and pepper. Mix until well combined.
- Form the mixture into small patties (about 8 fritters).
- Heat oil in a skillet over medium heat.
- Fry fritters for 3โ4 minutes per side or until golden brown and heated through.
- While fritters cook, mix together sour cream, smoked paprika, lemon juice, and salt to make the smoky cream sauce.
- Drain fritters on paper towels, then serve warm with smoky cream sauce on the side or drizzled on top.
Notes
- You can substitute grilled shrimp with cooked crab or lobster for a seafood twist.
- Use low-fat sour cream for a lighter smoky cream sauce.
- Make fritters ahead and reheat in the oven for 10 minutes before serving.
