Description

Ingredients

  • 12 medium shrimp, peeled and deveined
  • 1 medium zucchini, thinly sliced
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup chopped red onion
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 large sheets of aluminum foil

Instructions

  • Preheat your grill to medium-high heat.
  • In a large bowl, combine shrimp, zucchini, corn, red onion, olive oil, lemon juice, parsley, salt, and pepper. Toss to coat.
  • Divide the mixture among the foil sheets.
  • Fold the foil to create packets, leaving a small opening at the top.
  • Grill packets for 10-12 minutes, or until shrimp is cooked through and veggies are tender.
