- 2 boneless ribeye or sirloin steaks (about 6 oz each)

- 4 slices of your favorite bread (sourdough, ciabatta, or whole wheat work well)
- 1 ripe avocado, sliced
- 1 small red onion, thinly sliced
- 1 cup fresh arugula or mixed greens
- 1 large tomato, sliced
- For the Sauce:
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice (optional, for extra tang)
- 1 teaspoon hot sauce (optional, for a little heat)

- Prepare the Steak:
- Preheat your grill or grill pan to medium-high heat. Drizzle the steaks with olive oil and season with salt and pepper on both sides.
- Grill the steaks for about 4-6 minutes per side, depending on the thickness and your preferred level of doneness (for medium-rare, aim for an internal temperature of 130-135°F or 54-57°C).
- Once cooked to your liking, remove the steaks from the grill and let them rest for 5 minutes before slicing against the grain into thin strips.
- Make the Sauce:
- In a small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, and hot sauce (if using) until smooth. Adjust seasoning to taste.
- Toast the Bread:
- While the steak is resting, toast the bread slices on the grill or in a toaster until golden brown and crispy.
- Assemble the Sandwich:
- Spread the sauce generously on both sides of the toasted bread.
- On one slice of bread, layer the fresh arugula or mixed greens, followed by the tomato slices, sliced steak, and avocado slices.
- Top with thinly sliced red onion and a pinch of salt and pepper.
- Serve:
- Place the second slice of bread on top, cut the sandwich in half, and serve immediately. Enjoy!
