Description

These Grinch Cookies are the perfect fun and festive treat for the holiday season! Made with a simple white cake mix and peppermint extract, these green cookies are soft, chewy, and irresistibly delicious. Decorated with red heart-shaped sprinkles, they add a touch of whimsy and holiday cheer to any dessert table.

Ingredients

Scale
  • 1 box (15.25 oz) white cake mix (e.g., Pillsbury)
  • ½ cup unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 teaspoon peppermint or mint extract
  • ½ teaspoon vanilla extract
  • Green gel food coloring (about 1 teaspoon, adjust to preference)
  • ½ cup powdered sugar
  • 1 tablespoon cornstarch (or tapioca starch/arrowroot powder)
  • Red heart-shaped sprinkles

Instructions

  • Preheat the Oven:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  • Prepare the Cookie Dough:
In a large mixing bowl, combine the cake mix, softened butter, and eggs. Mix until smooth and well combined.
Add the peppermint extract, vanilla extract, and green gel food coloring. Mix on low speed until the color is evenly distributed.
  • Coat the Dough in Powdered Sugar:
In a small bowl, whisk together the powdered sugar and cornstarch.
Using a medium cookie scoop (about 1.5 tablespoons), scoop the cookie dough into balls. Roll each ball in the powdered sugar mixture until fully coated.
  • Bake the Cookies:
Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are set and the tops appear dry.
  • Decorate the Cookies:
While the cookies are still warm, gently press a red heart-shaped sprinkle into the center of each cookie.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Adjust the amount of green food coloring to achieve your desired shade of green for the cookies.
  • For best results, ensure the dough is evenly coated with powdered sugar to achieve the crackled effect when baked.
  • These cookies are perfect for holiday gift giving or as part of a Christmas cookie exchange.
