Instructions
- Cook the Potatoes:
Heat 1 tablespoon of olive oil in a large skillet or pan over medium heat. Add the diced potatoes and season with salt and pepper. Cook, stirring occasionally, for about 10-12 minutes, or until the potatoes are golden brown and tender. Remove the potatoes from the skillet and set them aside. - Cook the Ground Beef:
In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and garlic and cook for about 3-4 minutes, or until softened and fragrant. Add the ground beef, breaking it up with a spoon. Cook until browned and fully cooked through, about 5-7 minutes. Drain any excess fat if needed. - Season the Beef:
Stir in the paprika, oregano, cumin, salt, and pepper. Add the beef broth (or water) and Worcestershire sauce (if using), and cook for 2-3 minutes until the flavors meld together and the mixture thickens slightly. - Combine Potatoes and Beef:
Return the cooked potatoes to the skillet and gently stir to combine with the beef mixture. Cook for an additional 5 minutes to heat everything through and allow the flavors to come together. - Serve:
Garnish with fresh chopped parsley for a pop of color and serve warm.
