Description

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 can (10 oz) red enchilada sauce
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • 2 tablespoons chopped fresh cilantro (optional)
  • Tortilla chips, rice, or tortillas (for serving)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and sautรฉ for 2-3 minutes until softened. Add garlic and cook for another 30 seconds.
  2. Add ground turkey to the skillet. Cook until browned and cooked through, breaking it up as it cooks (about 5-6 minutes).
  3. Stir in the black beans, corn, enchilada sauce, cumin, chili powder, salt, and pepper. Mix well to combine.
  4. Reduce heat to low and simmer for 5-7 minutes to let the flavors meld and sauce thicken slightly.
  5. Sprinkle the shredded cheese evenly over the skillet. Cover with a lid and cook for another 2-3 minutes, until the cheese is melted and bubbly.
  6. Remove from heat and garnish with chopped cilantro if desired.
  7. Serve hot with tortilla chips, over rice, or wrapped in warm tortillas.
