- 2 medium sweet potatoes, peeled and diced

- 1 can (15 oz) black beans, drained and rinsed

- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or your choice)
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground turkey until browned, breaking it apart with a spoon (5-7 minutes). Drain any excess fat.
- Add the onion and garlic to the skillet, cooking for 3-4 minutes until the onion becomes translucent.
- Stir in the sweet potatoes, corn, black beans, cumin, paprika, salt, and pepper. Cook for 10 minutes, stirring occasionally, until the sweet potatoes are slightly tender.
- Transfer the mixture to a greased 9×13-inch baking dish. Spread it evenly and top with shredded cheese.
- Bake for 25-30 minutes, or until the sweet potatoes are fully cooked and the cheese is melted and bubbly.
- Remove from the oven, let cool for a few minutes, and garnish with fresh cilantro before serving.
