  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium zucchinis, chopped
  • 1 bell pepper, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until softened, about 3 minutes. Add garlic and sauté another minute.
  3. Add ground turkey, breaking it up with a spatula. Cook until browned and no longer pink, about 6–7 minutes.
  4. Stir in zucchini and bell pepper. Cook for another 5–7 minutes, until veggies are tender.
  5. Season with salt, pepper, Italian seasoning, and red pepper flakes if using.
  6. Sprinkle with Parmesan cheese if desired and stir to melt.
  7. Garnish with chopped parsley and serve warm.
