Description

The Grown-Up Grilled Cheese takes your classic comfort food to the next level with rich, creamy cheeses and a gourmet twist. With a combination of sharp cheddar, creamy brie, and a touch of caramelized onions, this grilled cheese is elevated with layers of bold flavors and a crispy, buttery exterior.


Ingredients

  • 2 slices thick-cut sourdough bread
  • 2 tbsp butter, softened
  • 1/4 cup sharp cheddar cheese, shredded
  • 1/4 cup brie cheese, sliced (rind removed)
  • 1/4 cup goat cheese, crumbled
  • 1/4 cup caramelized onions (see note)
  • 1 tsp Dijon mustard (optional, for added zing)
  • Fresh thyme (optional, for garnish)

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread butter on one side of each slice of sourdough bread.
  3. On the unbuttered side of one slice, layer the sharp cheddar cheese, brie cheese, goat cheese, and caramelized onions. Optionally, spread a thin layer of Dijon mustard on the other slice of bread.
  4. Top with the second slice of bread, buttered side facing out.
  5. Place the sandwich in the preheated skillet and cook for 4-5 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  6. Once the sandwich is golden and crispy, remove from the skillet and slice in half. Garnish with fresh thyme if desired. Serve hot and enjoy!

Notes

  • Caramelized onions can be made ahead of time by cooking thinly sliced onions in a pan with a bit of butter and sugar until golden brown and soft, about 15-20 minutes.
  • If you prefer a sharper contrast, add a few slices of crispy bacon to the sandwich.
  • For extra richness, you can drizzle a little honey on the inside of the bread before adding the cheese layers.
