2 ripe avocados, mashed

Salt and pepper to taste

-
Instructions
-
Prepare the shrimp:
In a bowl, toss the shrimp with olive oil, chili powder, garlic powder, paprika, salt, pepper, and lime juice. Heat a large skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and cooked through. Remove from heat and set aside to cool slightly. -
Make the guacamole:
In a bowl, mash the avocados until smooth. Add the diced red onion, jalapeño, tomato, cilantro, lime juice, salt, and pepper. Stir to combine and adjust seasoning as needed. -
Assemble the shrimp bites:
On each tortilla chip, place a small spoonful of guacamole. Top with one shrimp per chip. -
Serve:
Garnish the shrimp bites with fresh cilantro leaves and lime wedges on the side. Serve immediately and enjoy!
Notes
-
For added flavor, you can grill the shrimp instead of sautéing them for a smokier taste.
-
If you like your guacamole extra spicy, add more jalapeño or even a dash of hot sauce.
-
These shrimp bites can be made ahead by prepping the guacamole and shrimp separately and assembling just before serving.
