- 1 1/2 cups beef broth (or water)
- 1 tsp Worcestershire sauce
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese (optional, for topping)
- 1 tbsp olive oil (for sautéing)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through (about 5-7 minutes).
- Add the chopped onion and minced garlic to the skillet and cook for another 2-3 minutes until softened.
- Stir in the Worcestershire sauce, salt, and black pepper, then add the diced tomatoes (with juices), cream of mushroom soup, and beef broth. Stir to combine.
- Add the uncooked rice to the skillet, stirring to evenly distribute it into the beef mixture. Bring it to a simmer.
- Transfer the entire mixture into a greased 9×13-inch casserole dish.
- Cover the casserole with aluminum foil and bake in the preheated oven for 30-35 minutes, or until the rice is cooked and the liquid is absorbed.
- (Optional) After baking, sprinkle the shredded cheddar cheese on top of the casserole. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it rest for a few minutes before serving.
