  • 1 cup long-grain white rice, uncooked
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • 1 1/2 cups beef broth (or water)
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese (optional, for topping)
  • 1 tbsp olive oil (for sautéing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through (about 5-7 minutes).
  3. Add the chopped onion and minced garlic to the skillet and cook for another 2-3 minutes until softened.
  4. Stir in the Worcestershire sauce, salt, and black pepper, then add the diced tomatoes (with juices), cream of mushroom soup, and beef broth. Stir to combine.
  5. Add the uncooked rice to the skillet, stirring to evenly distribute it into the beef mixture. Bring it to a simmer.
  6. Transfer the entire mixture into a greased 9×13-inch casserole dish.
  7. Cover the casserole with aluminum foil and bake in the preheated oven for 30-35 minutes, or until the rice is cooked and the liquid is absorbed.
  8. (Optional) After baking, sprinkle the shredded cheddar cheese on top of the casserole. Return to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let it rest for a few minutes before serving.

Notes

  • You can substitute the cream of mushroom soup with any other cream soup you prefer, such as cream of chicken or cream of celery.
