- 6 slices prosciutto, torn into smaller pieces

Instructions
- Prepare the Hash Browns:
Grate the potatoes using a box grater or food processor. Place the grated potatoes into a clean kitchen towel and squeeze out any excess moisture.
Heat olive oil in a large skillet over medium heat. Once hot, add the grated potatoes, pressing them down with a spatula to form a pancake-like layer. Cook for 4-5 minutes on each side, or until golden and crispy. Season with salt and pepper.
Remove from the skillet and set aside to drain on paper towels. - Prepare the Avocado Mash:

Spread a generous layer of mashed avocado onto each toasted slice of bread.

Arrange the prosciutto slices on top of the hash browns. You can slightly crisp the prosciutto in the skillet for extra crunch or leave it soft.
