- 1 1/2 cups rolled oats
- 1 cup whole wheat flour
- 1/2 cup vanilla or plain protein powder
- 1/2 cup brown sugar or coconut sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup milk (dairy or plant-based)
- 1/4 cup unsweetened applesauce
- 1/4 cup plain Greek yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups mixed fresh or frozen berries (blueberries, raspberries, strawberries)
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease well.
- In a large bowl, combine oats, whole wheat flour, protein powder, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together milk, applesauce, Greek yogurt, eggs, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Gently fold in the berries, being careful not to overmix.
- Divide batter evenly among the muffin cups, filling about 3/4 full.
- Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use fresh berries when possible for best texture, but frozen berries work well if thawed and drained.
- Substitute applesauce with mashed banana for a different flavor.
- These muffins freeze well; store in an airtight container for up to 3 months.
- For vegan version, replace eggs with flax eggs and use plant-based milk and yogurt.
