- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup almond flour
- 1/4 cup ground flaxseed
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
- 1–2 tablespoons sweetener (optional, such as erythritol or stevia)
- 1 tablespoon coconut oil or butter (melted)
- 1/4 cup water (or milk of your choice)
Instructions
- Preheat your waffle iron and lightly grease it with cooking spray or melted butter.
- In a large bowl, whisk together the cottage cheese, eggs, almond flour, ground flaxseed, vanilla extract, baking powder, salt, and sweetener (if using). Add water or milk to thin the batter to your desired consistency.
- Pour the batter onto the preheated waffle iron, using about 1/4 cup for each waffle, depending on your waffle iron’s size.
- Close the waffle iron and cook according to the manufacturer’s instructions until the waffles are golden and crisp.
- Carefully remove the waffles and serve with your favorite toppings, such as fresh berries, sugar-free syrup, or whipped cream.
Notes
- You can substitute almond flour with coconut flour (use half the amount) for a gluten-free alternative.
- For extra flavor, try adding a pinch of cinnamon or nutmeg to the batter.
