Description

A light and healthy Greek chicken salad, packed with fresh vegetables, grilled chicken, and a tangy dressing.


Ingredients

  • 2 chicken breasts, grilled and sliced
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Grill the chicken breasts until fully cooked, then slice them into thin strips.
  2. In a large bowl, combine the cucumber, cherry tomatoes, red onion, Kalamata olives, and feta cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper to make the dressing.
  4. Drizzle the dressing over the vegetables and toss to coat evenly.
  5. Add the sliced chicken on top and serve immediately.
