Description

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Prepare the Oats: In a bowl, combine the rolled oats with 1/2 cup of warm water. Let them soak for 5–10 minutes to soften.
  3. Mix the Dry Ingredients: In a separate bowl, whisk together the whole wheat flour, almond flour, baking powder, baking soda, salt, and cinnamon (if using).
  4. Combine the Wet Ingredients: In another large bowl, whisk together the eggs, applesauce, honey (or maple syrup), milk, lemon zest, lemon juice, and vanilla extract until smooth.
  5. Combine Wet and Dry Ingredients: Add the wet mixture to the dry ingredients and stir to combine. Fold in the soaked oats, poppy seeds, and any remaining water from soaking the oats. Stir until just combined; do not overmix.
  6. Pour into the Loaf Pan: Pour the batter into the prepared loaf pan and spread it out evenly.
  7. Bake: Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  8. Cool and Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing. Enjoy!

  • If you prefer a sweeter bread, you can increase the amount of honey or maple syrup to 3/4 cup.
