Description

A healthier take on the classic Twix candy, these cups feature a crunchy almond butter base, a homemade caramel layer, and a rich dark chocolate topping.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup coconut oil, melted
  • 2 tbsp maple syrup
  • 1/4 tsp salt
  • 1/2 cup medjool dates, pitted
  • 2 tbsp almond butter
  • 1/4 cup coconut milk
  • 1/4 cup coconut sugar
  • 1/2 tsp vanilla extract
  • 1 cup dark chocolate chips (70% cacao or higher)

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, mix almond flour, melted coconut oil, maple syrup, and salt until crumbly.
  3. Press the mixture evenly into the bottom of each muffin cup to form the crust.
  4. Bake crusts for 8-10 minutes until lightly golden. Remove and cool.
  5. In a food processor, blend dates, almond butter, coconut milk, coconut sugar, and vanilla extract until smooth to make caramel.
  6. Spread caramel evenly over cooled crusts and freeze for 15 minutes to set.
  7. Melt dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  8. Pour melted chocolate over caramel layer and refrigerate for 30 minutes until set.
  9. Remove from muffin liners and serve chilled.
