For the Cookies:

Instructions
- Preheat the Oven and Prepare the Baking Sheets:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking. - Prepare the Cookie Dough:
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, cream together the softened butter and granulated sugar using an electric mixer or by hand until light and fluffy.
Beat in the egg and vanilla extract until combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If the dough is too soft, add a tablespoon of milk to help bring it together. The dough should be firm but slightly soft. - Roll and Cut the Dough:
Divide the dough in half. On a lightly floured surface, roll out one portion of dough to about 1/4 inch thickness.
Using a heart-shaped cookie cutter, cut out as many cookies as you can. Place them onto the prepared baking sheet.
Use a smaller heart-shaped cutter (or a round one) to cut out the center of half of the cookies for the jam to show through. - Add the Jam Filling:
Place about 1/2 teaspoon of your chosen fruit jam into the center of each cookie that has the hole in the middle. Be careful not to overfill to avoid spilling during baking. - Bake the Cookies:
Place the baking sheet in the oven and bake for 10-12 minutes or until the edges of the cookies turn golden brown. Keep an eye on them to avoid overbaking. - Cool and Assemble:
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. - Assemble the Cookies:
Once the cookies are completely cool, place a plain cookie on top of each jam-filled cookie. If desired, dust the tops with powdered sugar for a beautiful finish. - Serve and Enjoy:
