Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. Prepare the dry ingredients: In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Make the cookie dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg, vanilla extract, and almond extract (if using), and beat until combined.
  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, mixing until a dough forms. It will be soft and slightly sticky.
