Description

Hearty Steak Bites on Loaded Baked Potatoes is a perfect comfort food combination! Tender, seasoned steak bites are served on a fluffy baked potato, loaded with sour cream, cheese, bacon, and green onions. This hearty meal is filling, flavorful, and perfect for a cozy dinner.

Ingredients

Scale

For the Steak Bites:

  • 1 lb sirloin steak (cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

For the Loaded Baked Potatoes:

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • Salt (for seasoning the potatoes)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 slices cooked bacon (crumbled)
  • 2 green onions (chopped)
  • 1 tablespoon butter (optional)

Instructions

  1. Prepare the Baked Potatoes: Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and pat them dry. Rub each potato with olive oil and sprinkle with salt.
Place the potatoes directly on the oven rack or on a baking sheet and bake for 45-60 minutes, or until they are fork-tender. Once done, remove from the oven and let them cool slightly. Cut a slit down the middle of each potato and fluff the inside with a fork.
  2. Cook the Steak Bites: While the potatoes are baking, heat olive oil in a large skillet over medium-high heat.
In a bowl, season the steak bites with garlic powder, onion powder, smoked paprika, salt, and pepper.
Once the oil is hot, add the steak bites to the skillet in a single layer. Cook for 4-5 minutes, stirring occasionally, until the steak is browned and cooked to your desired doneness. Remove from the heat and set aside.
  3. Assemble the Loaded Potatoes: Once the baked potatoes are ready, slice them open and fluff the inside with a fork. If you like, add a tablespoon of butter to each potato for extra richness.
Top each potato with a generous amount of shredded cheddar cheese. Return the potatoes to the oven for an additional 3-5 minutes, just to melt the cheese.
  4. Top with Steak Bites: Once the cheese is melted, remove the potatoes from the oven. Top each potato with the cooked steak bites.
Add a dollop of sour cream on top, then sprinkle with crumbled bacon and chopped green onions.
  5. Serve:
Serve the loaded baked potatoes with steak bites immediately, and enjoy this hearty and delicious meal!

Notes

  • For a variation, you can add sautéed mushrooms or roasted vegetables to the potatoes for extra flavor and texture.
  • You can substitute the sour cream with Greek yogurt for a lighter option, or use a different cheese like Monterey Jack or pepper jack.
  • Leftover steak bites can be stored in the fridge and used for salads or sandwiches the next day.
