- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 3 ripe bananas, sliced
- 1/2 cup crushed pineapple, drained
- 1/2 cup maraschino cherries, chopped
- 1/2 cup mini chocolate chips
- 1/4 cup chocolate syrup, for drizzling
- Optional: whipped cream for topping
Instructions
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press mixture into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator for 10 minutes.
- In a large bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract, beating until well combined.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until smooth and creamy.
- Layer half of the cream cheese mixture over the chilled crust.
- Arrange half of the banana slices, crushed pineapple, chopped cherries, and mini chocolate chips over the cream layer.
- Spread the remaining cream cheese mixture over the fruit and chocolate layer.
- Top with the remaining banana slices, cherries, and chocolate chips. Drizzle chocolate syrup on top.
- Cover and refrigerate for at least 4 hours or overnight to set.
- Optional: Serve with whipped cream on top before slicing.
Notes
- Use fresh bananas to avoid browning, or toss them in a little lemon juice before layering.
- Substitute crushed pineapple with fresh if preferred.
- For a firmer cheesecake, add 1 packet of unflavored gelatin dissolved in 2 tablespoons of water to the cream cheese mixture.
